Our ducks free range during the day and are fed high quality Mazuri Waterfowl feed that has been specially formulated to meet their needs. Compared to chicken eggs, duck eggs have a higher concentration of Omega-3 fatty acids and are higher in Vitamins A, C, and D, as well as Calcium and Iron.  Duck eggs contain more albumen than chicken eggs. This is the big bonus when baking with duck eggs. More albumen gives baked goods more structure and a higher lift. Cakes and other pastries come out fluffier and lighter than with chicken eggs.  They will cause baked goods to have a moist texture and rich taste.  Substitute them in recipes at a 1:1 ratio.
